Sit on them.
Asking what kind of bike you should buy is like asking what kind of shoes I should wear. It all depends on what kind of feet I have. And the only way to find out what is comfortable is to try them on.

Of course I'm generalizing from a single example here, but everyone does that. At least I do.

The 250cc cruisers are great beginner bikes but are pretty gutless. You'll outgrow them quickly. If you want a 250...get the ninja 250, its very easy to handle but still has some grunt.
But I think a good first cruiser for someone your size would be the kawasaki vulcan 500 or maybe the suzuki s40 (aka savage 650). Both are pretty light and easy to handle but have decent power. If you plan on doing alot of freeway riding then the vulcan 500 is probably your best bet since it has a 6-speed transmission.
The sales guys at a dealership might try to steer you towards something like an 800-1000cc cruiser but dont listen to them, those are pretty heavy bikes for a beginner. And you may want to consider a used bike in case you have a low speed drop while you are learning. Or at least invest in a crash bar if you insist on a brand new one.
