Power isn't smooth anymore. What gives?

My bike lately has has been hitting plateaus in the RPM range throughout acceleration. It's been 8k miles since I bought it used and I haven't had any valve adjustments or anything done. It's my only real means of transportation (40 mile commute in my 9mpg mustang is a waste of money) so I don't want my bike to sit at a shop waiting for service if it's unnecessary.

My question is, does this sound like a valve adjustment issue, carb sync maybe? Plus it's slowly developed more and more headshake, I used to be able to go for miles without touching the bars but now I can't take my hands off for more than a few secs. Same tires and everything so what could be causing this? The wheel turns side to side smoothly, I'm not sure what else to look for thanks.

And finally, how much can I expect to pay if I get the valves done? Thanks.

You need a full servicing. Cost varies by area. Which bike are you talking about?

As for your head shake, make sure the tires are at the proper spec, and make sure they aren't scalloped or anything.
