Restoring an 81 kz 650 CSR- Getting rid of rust and grim

I get a bike for helping a guy get his other three bikes up and running again. As he put it, I will be needed to point him in the right direction and help him drink a few beers. Doesn't hurt that I have free access to a metal shop and a paint shop.

I now have project number 3. The Kawasaki KZ 650 CSR which looks to be functional, shouldn't be to hard to get running and once I get it running I want to work on getting her pretty as a button. Shiny metal, new paint, new seat and new rubber. Unfortunately, I don't know the best way to get the light rust and grim off the metal, and make everything shiny again.

The plan right now is to
1.) get her running (make sure she's getting good fuel, spark and compression)
2.) get her road worthy (rebuild brakes, change brake pads/fluids/filters)
3.) get her shiny (?)
4.) replace turn signals, make a new seat ($+time)
5.) custom paint job

I hope to get the first two done soon (2 weekends), spend as much time as I need on three and four, then once I've gotten to know her sketch up some ideas for 5. I'll be sure to post a picture soon and more along the way
