Quick addition - make sure the old o-ring on the spin on type came off with the old filter.
Of course I'm generalizing from a single example here, but everyone does that. At least I do.

I'm with Sev. There should be no problem at all starting it up with 3 month old oil. Starting it before changing the oil is actually the right way to do it. Any moisture or acids that built up in the crankcase over the last 3 months will be washed into the oil, and subsequently removed when you drain it. If you were to drain it cold, you'd leave that buildup inside the engine to contaminate your new oil.

Is there actually any benefit to changing the oil before storing the bike, or is it just that its a convenient time to do it?

Removes the contaminants from the engine case so it doesn't harm anything?
